KEFIR BEE POLLEN CHEESE CARAMELLY SUNDAE

THE KEFIR BEE POLLEN CHEESE IS A RATHER MILD TASTING CHEESE. WE HAD A SPECIAL TREAT WITH IT THIS MORNING. PLACE ABOUT ¼ C. OF IT IN THE BOTTOM OF 2 DESSERT DISHES, ONE FOR YOU AND ONE FOR A SPECIAL FRIEND. TOP IT WITH ½ THE CARAMEL TOPPING WHICH I MADE AS FOLLOWS. I CAN’T IMAGINE A PURCHASED TOPPING TASTING AS YUMMY!

I MADE THE CARMEL TOPPING TODAY LIKE THIS:

• SUNBUTTER OR BUTTER: USE ABOUT 2 ROUNDED TABLESPOONS OF MY “SUNBUTTER” RECIPE (ACTUALLY IT WAS FROM GAYLORD HAUSER, A FOOD NUTRITION PIONEER OF THE 60’S.) (It too is very simple: ½ butter, ½ a good nutritious oil of your choice. Various oils have various thickening properties but I like to use a mix so it and the butter, (melted just barely enough to mix easily with the oil), will mix together and become of spreadable consistency when kept in the refrigerator.) NOTE: IF YOU DO NOT HAVE SUNBUTTER AVAILABLE TO YOU, I WOULD USE BUTTER AS A NEXT PREFERRED INGREDIENT FOR THE CARAMEL, ALTHOUGH A HEAVY CREAM WOULD WORK ALSO.

• ALTHOUGH I MICROWAVED THE TOPPING, THE MICROWAVING IS SOMETHING I GENERALLY DON’T ALLOW MYSELF TO DO AS IT CHANGES THE STRUCTURE OF WHATEVER IT HEATS. BUT I DIDN’T WANT TO USE MY BIG CAST IRON SKILLET FOR SUCH A SMALL AMOUNT OF CARAMEL TOPPING AND IT WAS THE ONLY ONE AVAILABLE.
• BROWN SUGAR: I BELIEVE I USED APPROXIMATELY ½ CUP OF BROWN SUGAR. MIX IT WITH THE SUNBUTTER IN A MICROWAVE SUITABLE CUP, SOUPCUP, ETC. AND PLACE IN THE MICROWAVE COVERED ON NORMAL TEMP FOR ABOUT 25 SECONDS. REMOVE, STIR AND PLACE BACK IN FOR APPROXIMATELY ANOTHER 25 SECONDS. STIR AGAIN RAPIDLY SO IT DOESN’T HARDEN TOO FAST AND POUR OVER THE 2 DISHES OF CHEESE.
• EAT/ENJOY!
• VARIATIONS: ONE COULD USE PARTLY HONEY FOR SOME OF THE BROWN SUGAR, COCONUT OIL FOR THE SUNBUTTER, AND ADD SOME SPECIAL NUTS TO THE CARAMELLY MIX (I WOULD RECOMMEND PECANS FOR THEIR TASTE COORDINATING WITH THE CHEESE AND TOPPING)
